You can create multipe IdP settings. So in your accp environment deactivate the old one and create the new IdP. Then test this setup with the admin of the Azure environment. If everything is working in accp you can then create your IdP setting in production. In production you only need to do some timing for the switch. I would not do that during business hours. Just deactivate the old setting activate the new and test that it is working in production. If not switch back and double check why the production setup is different from the accp setup.
