You need to see the page, which layout it use (1). Then change from the layout (2)

Although that works, the more gentle way in Mendix Studio (since that is what you asked) is:

Click the pencil 

and then just upload the logo:

 

The more gentle in Studio Pro is to replace the app’s logo, which is inside Atlas_Core’s image collection ‘Layout’ and by default the Mendix image:
