Is there a way to see in Sprintr an overview of all your userstories together from different projects?

No, but you could make one yourself in a Mendix app. Because all the content can be retrieved with an API. See the documentation here: https://docs.mendix.com/apidocs-mxsdk/apidocs/stories-api
