Consider a situation where I'm developing a new application from scratch and don't want to work with branches. Is it possible to revert a document (microflow, form, etc) to the latest version in the Team Server repository?

Not yet, but we are working on that. (Currently, you could use tortoise to revert your whole project to the latest version)
