how can a mendix application communicate to multiple databases at the same time, over and above the mendix data database

If you want to connect to custom databases you'll have to implement this yourself using Java Actions. There have been some efforts in this direction already though, for example check out the database replication module in the appstore if you want to import data from other databases.
