Is there a possibility to use a custom widget in a document template?

No this is not possible, the document generator works with xsl-fo anyway so it would be quite different from a regular custom widget. What you can do is use a dynamic label and use the Render HTML feature which means you can put HTML in the attribute you're rendering and the generator will convert it to xsl-fo.

I don't know what specific custom widget you are talking about (if there is one you have in mind) but as far as my understanding goes with document templates, this is not possible.
