how can i use the UploadedFilesPath (to change where my uploaded document are saved at?)do i need to specify in a custom save microflow and if yes i do i go about it or is it to do with the modeller setting in Mendix, or do i need to call a java action

It's an application setting. Check out the documentation to find out how to change the setting on your environment (it differs between windows/*nix)
