Thanks for reporting this!
We’re aware of this issue and we plan to fix it in Mendix Studio Pro 8.1.
Meanwhile, you can manually reinstall AdoptOpenJDK 11.0.3.7. You will have to remove the other version (11.0.4.11). Then Studio Pro installation should succeed.
