It sounds like you want to export information about the entities, attributes and associations.  If so, take a look at the Model Reflection model which makes some of the domain model information accessible via the Mendix user interface.  You could use some of the entities in that module to create a datagrid with the necessary information and then add an Export to Excel button to that datagrid.
