Export mapping from SAP S4 Hana (non persistable data)

Hello, how can I use export mapping (via JSON) with the data, that is read from an SAP S4 Hana backend? But the entities from S4 Hana backend are non persistable. Here some screenshots: Does anybody have an idea to solve this problem? Thank you.
