We have developed multiple application on Mendix platform and we have used private cloud server (AKS) for hosting the application. To ensure the all apps running state, what would be the app resource requirement and what is the minimum requirement on AKS to run the application, in term of Node Pool, Memory size etc.

There is no clear answer for this because it all depends on the size of the model and how much the application is used. I would check the plans for the Mendix cloud and pick one of those sizes for your base.
