What are main differences between on premise deployements ?

I would like to understand the differences between on-premise deployment under Microsoft Windows and deployment on Industrial Edge in order to make the best choice for my application. I have already noticed that the number of users on Edge is limited to 10, so it seems that the deployment model on Industrial Edge is less scalable.The price difference between the two models is significant, that's why I am wondering
