Hello, I was wondering if I could change the name of the tab name whether it be on the sandbox version or running the app locally, as now it is using the default as shown in the above image.

Yes, The part before the dash is the project name, and the part after the dash is the page title (page title can be changed from the page properties), “Project name – Page title”
