Is it possible to set the file name of the CSV file yourself when using the 'Export to CSV' button? Is it possible to set the destination of the CSV file yourself when using the 'Export to CSV' button? (would be great!)

Nope, that is not possible. You could use the Excel exporter module that will give you a lot more control over the export.
